Picture a beautiful high tea setting with elegant cups and saucers, but with a twist that makes it even more enchanting: the perfect harmony of cheese and chocolate enhancing every sip. About the Workshop:
This immersive workshop is designed for those who wish to deepen their appreciation for these refined pairings and explore delightful flavour combinations.
Over 90 minutes, you’ll be guided through three expertly crafted rounds, each featuring a handpicked tea, a complementary chocolate, and two carefully selected cheeses. In each round we will explore:
- Tea Growing Regions: Discover the origins and unique characteristics of each tea.
- Cheese Provenance: Unveil the rich heritage behind our cheeses, each telling a story of tradition, terroir, and craftsmanship.
- Indian Craft Chocolate: Experience the diverse and rich flavours of Indian-origin chocolate, paired thoughtfully with teas and cheeses to highlight their unique profiles.
- Flavour Exploration: Learn to use flavour wheels and deepen your understanding of how sensory qualities interplay between tea, chocolate, and cheese.
- Brewing Techniques: Delve into the nuances of brewing and how these techniques influence the tasting experience.
- Sweet & Savoury Pairing Delights: The tasting will feature a surprise dish, sweet & savoury, specially crafted by SOWL, that creatively blends the rich flavours of chocolate, cheese, and tea into an unforgettable culinary experience.
The session will be conducted by the following experts:
- Namrata Sundaresan, an internationally certified cheese maker & Co-founder of Käse.
- Patricia Cosma, a Cacao and Chocolate expert & Co-Founder of Indian Cacao and Craft Chocolate Festival (ICCCF).
- Dona Aideau, a certified Tea Taster / Sommelier and a 4th generation Tea Maker associated with the Tea Board of India.
