About the Session:
Italy’s culinary soul lies in its pasta — simple, regional, and endlessly expressive. In this immersive Fresh Pasta Masterclass, Chef Goku takes participants on a journey through the diverse landscapes of Italy — from the silky tagliatelle of Emilia-Romagna to the hand-shaped orecchiette of Puglia and the delicate ravioli of Northern Italy.
This experience goes beyond recipes — it’s a deep dive into what makes pasta, pasta: the choice of flour, the texture of the dough, the role of regional ingredients, and the perfect pairing of cheese.
Session Flow:
1) Understanding the Foundations - Learn how to choose the right flour for the right pasta in association with Three One Farms — from soft, golden 00 flour to semolina for delicate sheets to the rustic bite of semolina rimacinata. Including both egg and eggless Pasta. Chef Goku will demonstrate how the same dough transforms across Italian regions, shaped by tradition, geography, and grain.
2) Hands-On Pasta Making - Participants will roll, shape, and cut their own fresh pasta guided by Chef Goku — exploring techniques that range from hand-rolling to machine-extruded textures. The tactile art of pasta-making meets the science of hydration, gluten, and time.
3) Cheese and Purpose - In partnership with Käse, the session will explore how different cheeses elevate Italian cuisine — from Parmigiano Reggiano’s nutty umami to the soft bloom of fresh burrata or the melt of aged Fontina. Learn what cheese to use, why it works, and how to integrate it into fillings, sauces, and toppings.
4) Baked Pasta - Using Prego ovens, Chef Goku will demonstrate how to build the perfect baked pasta — balancing texture, layering, and heat to create comforting classics like lasagna al forno or baked gnocchi with béchamel and cheese crusts.
5) Live Cooking & Tasting - The day concludes with a live cooking session where participants cook alongside Chef Goku — preparing a pasta dish that brings together everything learned. The class ends with a shared tasting, celebrating pasta, cheese, and craft over conversation.
